These top quality, low-yielding, fully ripened grapes were fermented and hand plunged in open vats before being matured in French and American oak barrels.

This wine is excellent drinking right now, however, over the next few years the tannins will round out and make the wine smoother and richer until it fully matures in around 8-10 years time. When it will be a sensational example of an elegant, mature, Clare Valley Cabernet Sauvignon.

Being a big wine, it goes best with rich, hearty meals or with a strong vintage cheese.
